The vinification of Astros wine is entrusted to Patrick Galliano, a graduate of the Oenology department of University of Montpellier. This “aroma sensor” is adept at traditional low-temperature vinification. The harvest, either carried out by machine, or by hand for the older parcels, is as fresh as possible. Vinification takes place in maceration tanks at a maximum temperature of 16°. After fermentation, between fifteen days and three weeks, the wine is drawn off and sulphur added. The wine then begins its ageing process in vats or barrels for three to twelve months depending on the vintage. Then comes assemblage or blending, to marry the finest expressions of a vintage, followed by bottling. |
