“With an eye to tradition”

The vinification of Astros wine is entrusted to Laure Ambroise-Habasque, a reputed agronomist and oenologist. This “aroma sensor” is adept at traditional low-temperature vinification.

The harvest, either carried out by machine, or by hand for the older parcels, is as fresh as possible.

Vinification takes place in maceration tanks at a maximum temperature of 16°. After fermentation, between fifteen days and three weeks, the wine is drawn off and sulphur added.

The wine then begins its ageing process in vats or barrels for three to twelve months depending on the vintage. Then comes assemblage or blending, to marry the finest expressions of a vintage, followed by bottling.

“At each stage of production, I seek out all the aromas a wine could reveal. It is then up to us to give it the possibility of expressing them during tasting”.
